This rich and creamy soup is so easy to make and by using frozen broccoli the preparation is minimal. This is a great recipe for the slow cooker & a great way to have one of your five a day.
1 Bag Frozen Broccoli
1 Vegetable Stock Pot
100ml Unsweetened Almond Milk
Water to cover
Place the broccoli, stock pot and milk into a slow cooker or large pan, top with water so it’s just covering the Broccoli and cook. If using a slow cooker, cook for 2-4 hours, if using a pan bring to the boil then simmer until the Broccoli is completely soft. Once cooked, blend and serve.
