This Tasty & Hearty dish is so easy to make and it tastes delicious! Very easy to put together with very little preparation. It’s one for the whole family.
1 Tin Light Corned Beef
1 Cup Frozen Onion
2 Cups Frozen Sliced Carrots
6 Large Potatoes Peeled and Cut into Bite Size Pieces
2 Beef Stock Pots
1 Oxo Cube
Boiling Water to Cover
Jar of Pickled Red Cabbage to Serve
Simply chop the corned beef and add to a large pan, pressure cooker or slow cooker. Add the onion, carrots, potatoes, stock pots and oxo. cover with water so it’s about 2 inches higher and cover with a lid. Cooking times will vary depyon method used. . Bring to the boil first if using a large pan or pressure cooker then reduce to simmer for 1-1 ½ hours - for a slow cooker - cook on high for 1 hour then reduce to low for a further 2-3 hours. Make sure to stir occasionally to ensure even cooking and add more water if necessary. The corned beef hash will continue to thicken as it cools and is even nicer the next day.
Serve with Pickled Red Cabbage.
