Egg Fried Rice

Cooked Rice

2 Eggs

Bacon (Fat removed) and finely chopped

Onion finely diced

3 Tablespoons Soy Sauce

handful  of frozen peas (optional)

Fry Light


Cook the onion in fry light until golden and add the peas if using and add the bacon, cooking until browned.  In a bowl whisk the 2 eggs and scramble in the microwave (to make scrambled eggs – Mix after one minute with a fork then return and mix again after 1 more minute, repeat until all the eggs are cooked and scrambled).  Add the cooked rice to the pan and add 3 tablespoons soy sauce and mix well, add the scrambled egg and mix again. Enjoy with your favourite Chinese dish.
