This high protein,very low fat & filling dish is so easy to make and tastes delicious. It can be eaten hot or cold and is great served with a crisp salad. It also ideal as a snack or for the lunch box. The Parmesan cheese really enhances the flavours and is a great partner for the char-grilled red peppers. This is one for the whole family and a great recipe to make with the kids.
2.5kg Potatoes, peeled & chopped into bite size pieces
1 Tub Quark
1 Teaspoon Dried Parsely
½ Teaspoon Garlic Salt
½ Jar Chargrilled Red Peppers
1 Onion Finely Chopped
Salt & Black Pepper
2 Tablespoons Fresh Parmesan Cheese
Cook the potatoes and drain. In a non stick pan fry the onions the add the peppers. Mix together the eggs, quark, parsley, garlic salt and Parmesan cheese, season with salt and pepper. Add the potatoes to the pan and gently mix in with the onion and peppers. Pour over the egg mix ensuring all the potatoes are covered. On a gentle heat, cook for 5-10 minutes or until starting to firm. Next place under a medium grill until turning golden brown and firm to touch, ensuring it’s cooked right through. Can be eaten hot or cold.
