Sugar Free, Gluten Free Lemon Egg Pancakes with Parma Ham & Maple Syrup or Sugar Free Caramel Sauce

The taste sensation of this really easy recipe will blow you away… it’s so easy to make & great for those lazy Sunday mornings or as a snack or dessert. It’s sugar free and there’s no flour to worry about. You can opt for sugar free maple syrup sauce (available in most health food aisles/shops) or you can make the sugar free caramel sauce below.


Serves 1-2


2 Eggs separated

1 Capful  Lemon Flavouring

2 Tablespoons Granulated Sweetener

2-4 Slices Parma Ham

1/2 Tablespoon Maple Syrup or sugar free sauce per serving


Method:


Place the egg whites into a mixing bowl (preferably glass or stainless steel) mix with an electric mixer until starting to form soft peaks and add in the sweetener mix a little more until white and glossy. In a separated bowl mix the yolks with the lemon Flavouring then fold into the whites until fully mixed. Spray a hot non stick pan with low calorie cooking spray and spoon in mix to make small pancakes, cook for a minute or two then turn over pressing down gently with the spatula. Stack on a warmed plate, once all the pancakes are cooked fry your Parma Ham until starting to crisp and pile on top of your pancakes. Spoon over 1/2 tablespoon Maple Syrup, sit down and enjoy every mouthful.


For Sugar Free Caramel Sauce


2 Caps Caramel Flavouring

100mls water

2 Tablespoons Granulated Sweetener

1/4 Teaspoon Xanthan Gum


Method:

Put all the ingredient into a bowl and whisk husk with an electric mixer until it thickens. Can be heated.
