Rice Crispie Coated Chicken Fillet Burgers

Serves 2-4


4 Chicken Breasts

1-2 Invidual Boxes or 40g Rice Crispie Cereal

2 Teaspoons Paprika

1 Teaspoon Garlic Salt

1 Teaspoon Cayenne Pepper

Frylight Spray

Plastic Sandwich Bag


Method:


Place the rice crispies (1 box/20g for light coating, 2 boxes or 40g for crunchier coating), into the sandwich bag, add the paprika, cayenne pepper and  garlic salt and shake to mix well, using a rolling pin or bottom of a dish/bottle crush the cereal mix until resembles breadcrumbs.


Spray the chicken with Frylight then roll in the coating and place on a lined baking tray. Repeat this for all the fillets, pressing any remaining crumbs on top.  Cook in a preheated oven 180 for 10 minutes, spray the coating again with Frylight and return to the oven for a further 20-30 minutes until they are crispy and golden and cooked through.



Serve between sandwich thins on a bed of Lettuce and top with cooked bacon, light cheese slice & Balsamic Onions (see recipe section)
